I am so excited because I made homemade spaghetti sauce with vegetables and herbs from our garden this year! It was so delicious, and I don't know if I will ever be able to handle canned sauce as well again.
I first took three different varieties of tomatoes from the garden (plum, orange-strawberry, and a big beef variety), cut them up, and put them into a saucepan. I added fresh cut up basil from my pot in the kitchen, salt, pepper, a little sugar, and garlic. I then boiled the tomatoes gently for about an hour, stirring them often. After an hour, I pureed the mixture down, and it was perfect! I didn't need to boil it anymore to get rid of any excess water. It was so good!!! I definitely want to try and make more.
